The 2009 Santa Barbara Highlands -Jordan Grenachewas created with passion, vision and to pay homage to a veryspecial girl ƒ‚‚– the proprietorƒ‚‚’s daughter- Jordan. The grapesfor this limited wine were handpicked in the cool morning hours inour Santa Barbara Highlands Vineyard at the peak of ripeness. Theywere delivered to the winery in small half-ton bins where they wereimmediately dumped onto a sorting table and then gently destemmedwhole berry into a small, open top tank for three days.

After a 3 day cold soak, we gently warmed thetank and primary fermentation started using only native yeasts. Anear perfect fermentation took place over 10 days, in which weallowed the must to peak at a temperature of 88F for one day. Wefeel this heat spike creates texture and mouth feel to the wine.After the must went dry, we gravity racked the wine to several3-year old French Oak barrels for secondary fermentation, commonlyreferred to as malolactic fermentation. This converts sharper malicacids into softer, creamier lactic acids.

Upon completion we allowed the wine to sit on thelees for an additional month to build a richer mouth feel. Finallywe racked the wine to tank to help with clarication, washed ourbarrels and put the wine back in them for an additional 13 mos. ofaging. At the end of this ageing process, we racked the wine totank and prepped it for bottling. We hope you enjoy this wine asmuch as we do...Cheers Jordan!

This very rare wine has beautiful hues of rubyred and jewel tones. After swirling the mysterious blend in yourglass, your nose rewards you with wonderful strawberry, plum andspice notes, with a hint of orange zest. Upon taking your rst sip,you will notice the silky and seductive nature of this wine.Flavors of candied red fruits, citrus peel, black tea and soyengulf the palette and leave a long and lingering smile on yourface. We felt so passionate about this wine that we decided to holdback only two barrels and bottle it unned and unltered. We hope itbrings you as much joy as we had making it.

Composition: 50% Viognier; 30% Rousanne; 20% GrenacheBlanc

Aroma: This wonderfully aromatic white Rhone style blend showcases acomplex array of floral and tropical notes, ripe peach, apricot,white pepper and stone fruits. It rewards the nose with hintsof pear, spiced apple and fresh baked lemon meringue. A touchof toasty French oak gives one a hint of sweet vanilla, and roundsout the nose.

Palate: Upon taking your first sip, you will immediatelynotice the creamy and silky texture this wine presents. Asthe wine flows across your mid-palate a mineral component coupledwith good natural acidity takes over and warms the mouth. Thefinish is smooth and satisfying and lingers long after you have setthe glass down.

Winemaking:The grapes for this exciting blend were harvested in Santa BarbaraCounty during the cool morning hours in [month]. They werebrought to the winery and immediately pressed to cold, stainlesssteel fermentation tanks. The juice was allowed to settle at50° F overnight and then barreled down to one and two year oldFrench oak barrels for the start of fermentation. Naturalyeasts were used to enhance mouth feel and aromatics. Afterprimary fermentation was completed, secondary Malolacticfermentation was used on 60% of the blend. This addsroundness to the mouth, and softens some of the harder acids thatcan occur. After aging in barrel for 10 months, the wine wasnitrogen racked to tank and the final blend was assembled. Great care was taken at every stage of the winemaking process toensure that the wonderful aromatics and luxurious texture of thiswine remained at the forefront.

FoodPairings: This pretty white wine is a natural match forseafood and light summer salads. In particular, wesuggestgrilled Mahi Mahi with a citrus-glazed butter served withjasmine rice. Or, try it with macadamia crusted prawns with ajalapeno infused (sauce)?. Of course, Sweet water oysters onthe half shell aren't half bad either! En Vino Veritas! (In wine there is truth) (or Cheers!) I like En VinoVeritas!
